Desserts

Banana Chocolate Chip Cake

Serves: 8

3 large bananas 
1 1/2 cups flour 
1 t. baking soda 
1 t. salt 
1/2 cup margarine 
1 cup sugar 
2 eggs 
1 cup chocolate chips 

Mash bananas, sift flour, baking soda and salt, cream margarine and sugar.
Add eggs, bananas and flour. Add chocolate chips and  bake at 350 in a greased pan for around 1 hour. 
Stick toothpick in and when it is clean, it is ready. I often put them in greased muffin liners, for cupcakes. They come out looking very nice. 

Apple Cobler

Serves: 6

1 cup sugar
1 cup flower
2 eggs
4 or 5 big apples (skinned)
1 stick of margarine
1 tsp. vanilla

Preheat oven to 350 degrees.  Grease a pan.  Cut apples into chunks.  Layer apples in the pan.  Mix ingredients together and pour over the apples.  Bake for about an hour at 350 degrees.

Cool Fruit Salad

1 lg. can pineapple chunks ( drained )
2 med. bananas sliced
2 oranges cut into bite size pieces
2 med. apples cored and chopped
1/2 of honey dew melon chopped into bite size pieces
1/2 cantaloupe chopped into bite size pieces
1 small vanilla yogurt


Mix ingredients and chill for 1/2 hour.

Chocolate Florentine Cookies

Serves: 3 ½ dozen sandwich cookies

2/3 cup margarine
2 cups uncooked oats
1 cup sugar
2/3 cup flour
¼ cup corn syrup
¼ cup mocha mix
1 teaspoon vanilla
2 cups chocolate chips

Preheat oven to 375. Melt margarine. Pour into bowl, stir in oats, sugar, flour, corn syrup, mocha mix, and vanilla. Mix well. Drop by teaspoonful on foil lined cookie sheets. Spread thin. Bake for 5-7 minutes. Cool completely. Peel foil away from cookies. Make a double broiler and melt chocolate chips, stir until smooth. Spread chocolate on flat side of cookies, top with remaining cookies (make a sandwich).

No-Bake Chocolate Peanut Butter Snack Bars

Serves: 4 ½ dozen bars

16 oz uncooked oats
2/3 cup corn syrup
3 tablespoons margarine
1 cup peanut butter
1 cup chocolate chips

Place oats in large bowl. Set aside. In a saucepan, combine corn syrup and margarine. Bring to a boil over medium heat, stirring occasionally. Remove from heat. Add peanut butter. Stir until mixture is smooth. Pour over oats; mix well. Press into 13x9inch pan. Make a double broiler and melt chocolate chips; stir until smooth. Spread evenly on top. Refrigerate until set (about 10 min.)

Peanut Butter Chocolate Chip Cookies

Serves: Makes about 5 dozen cookies.

2 Cups Margarine
2 Cups Creamy Peanut butter
2 Cups Sugar
2 Cups Brown Sugar
4 Eggs
2 Teaspoons Vanilla
5 Cups Flour
3 Teaspoons Baking Soda
1 Teaspoon Salt
2 bags Chocolate Chips


Thoroughly cream: margarine, peanut butter, sugar brown, sugar, chocolate chips, eggs, vanilla.  Sift together: flour baking soda salt. Blend mixtures together.  Shape into 11/2 inch balls.  Roll in sugar.   Flatten to about 1/2 inch thick, smoothing edges as needed. Place on ungreased cookie sheet.  Bake at 325o for 15-18-minutes or until lightly browned.

Fish

Tuna Casserole

1 small box Elbow Macaroni
1 Can Mushroom Soup
1 Can Cheddar Cheese Soup
1 Can Tuna Fish(small)
salt & pepper, pkg. Frozen Peas, Chips(optional)

Drain tuna. In an oven proof dish, Mix ALL INGREDIENTS together, EXCEPT chips.
Bake 350* for 45minutes covered.
Last 10minutes, remove cover. Serve with a large salad & ENJOY!!!!!
Optional: Before serving, sprinkle chips on top.

Lemon-Mayonnaise Baked Fish

2 ¼ lb. Fish fillets

1 tsp. Grated lemon rind
1 tbsp. Minced onion
½ cup mayonnaise
salt
pepper
1 tbsp. Lemon juice
paprika

Place fish in cold water with some lemon juice for about 1 hr. Arrange fillets in baking dish and sprinkle with salt and pepper. Mix remaining ingredients except paprika and spread on fish. Bake at 350 for 30 min. sprinkle with paprika.

Baked Carp

Sliced carp
½ tsp. Salt
¼ tsp. Pepper
1 tbsp. Oil

Rub each slice of carp in mixture of salt, pepper, and oil. Bake at 350 for 30 min.

Herring

2 herrings (washed, cut, and soaked for ½ hr)
1/3 cup vinegar
2/3 cup water
pepper corns
bay leaves
2 onions

Layer herring between Onion rings, bay leaves, and pepper corns. Cover with water and vinegar. Let marinate 24 hrs.

Tuna potato cakes

Serves: 4

4 potatoes
1 can tuna
1 tsp. Lemon juice
2 beaten eggs
salt and pepper to taste
oil for frying

cook and mash potatoes. Mash tuna and add lemon juice. Combine potatoes, tuna, eggs, salt , and pepper. Mix well. Shape into patties and fry.

Fish Cakes

2 lbs. Fish fillets
2 potatoes (peeled and sliced)
1 sliced onion
1 tbsp. Salt
water to cover
3 eggs
½ tsp. Pepper
3 tbsp. Matzo meal oil for frying

Cook together fish, potatoes, onion, salt, and water until all is tender. Add eggs, pepper, and matzo meal. Mix well. Form into flat cakes and fry.

Kugel

Yerushalmi Kugel

1 lb thin noodles
½ onion, minced
½ tsp. Salt
1/8 tsp pepper
3 eggs
¾ cup sugar
2/3 cup oil
cook noodles and drain. Boil sugar in oil. Don’t mix while cooking. When little brown bubbles appear, quickly mix hot noodles into oil and sugar while over flame. Add onions, eggs, salt, and pepper. Put into 9x13 baking pan and bake for one hour at 375.

Zuchini Kugel

2 lb. Squash
2 eggs
½ cup minced onions
1 tsp. Salt
pepper
¼ cup sugar
½ cup bread crumbs
½ cup margarine
cook squash for one hour, drain. Add remaining ingredients except bread crumbs, and mix. Pour into greased pan and sprinkle bread crumbs on top. Melt margarine and pour on top. Bake at 350 for one hour.

Carrot Kugel

3 cups choped or blended carrots
2/3 cup sugar
1/3 cup oil
1 cup flour
1 tsp. Baking powder
1 tsp. Baking soda
3 eggs
mix everything. Pour into greased 9" pan. Sprinkle cinamon and sugar on top. Bake at 350 for 45 min.

Sweet Rice Kugel

Serves:6-8
1 cup rice
3 eggs
1 tsp. Vanilla
½ cup sugar
1 cup raisins
1tbsp. Oil
1 tsp. Almond extract
7/8 cup orange juice
cook rice. Add remainign ingredients In order. Pour into greased 10" baking pan. Sprinkle top with cinamon. Bake for 40 min. at 350.

Chicken

Chicken (or Beef) Paprikash

Serves: 6

1 onion, chopped
3 small garlic cloves, chopped
10-12 cut pieces of Chicken or 1-2 lbs. of Beef
paprika (as desired)
salt (as desired)
pepper (as desired)

On stove top (low setting), sauté chopped up onions and garlic in a tablespoon of oil until brown.  Add chicken (or beef) and paprika.  Add small amount of water as necessary.   Let cook till chicken is tender (approx. 1 hour, beef about 2 hours).  Season to tast with salt and pepper.

Honey Mustard Chicken

Serves: approx. 10 pcs. chicken

½ cup honey
½ cup mustard
dry onion
paprika

Mix mustard and honey. Pour over chicken. Sprinkle dry onion and then paprika to taste. Bake at 350 till done (when poked, clear juice runs).

Hawaiian Chicken

Bar-B-Q sauce
Can of sliced or chunked pineapple

Pour Bar-b-q sauce to coat. Put pineapples on top. Bake at 350 till done.

Meat

Goulash

Serves: 5

1 onion - chopped
1 garlic clove - chopped
1 tablespoon oil
1 lb. beef (or as desired) cubed
1/2 tsp. salt
black pepper (as desired)
paprika (as desired)
6 medium potatoes - peeled
3-4 carrots - peeled and sliced

Brown onion and garlic with oil in a pot.  Put beef at low temperature about 10-15 minutes.  Add paprika and black pepper and salt.  Add 1 1/2 cups of water and simmer for about an hour.  Then, add potatoes and carrots.  Let cook for another 45 minutes or until potatoes and carrots are soft.  Salt to taste.

Elbow Chili

2 Tblsp. Oil
¼ cup diced onion
1 LB ground beef (or chicken)
2 cups tomato sauce

2 cups water
1 ½ tsp. Salt
1tsp. Chili powder
Pepper
½ tsp. Garlic powder
1 cup uncooked elbow macaroni

Brown Meat and onion in oil. Add remaining ingredients except for the macaroni. Bring to a boil and then add macaroni. Cover. Reduce heat and simmer until macaroni is done.

Meat Pie

Potato shell:
4 potatoes
1 egg
½ tsp. Salt
dash of pepper

Filling:
1 tbsp. Oil
1 lb. Ground beef
1 cup chopped onion
1 cup chopped celery
1 tsp. Salt
¼ cup tomato sauce

Cook potatoes. Mash and add one egg, well beaten. Add salt and pepper and mix well. Line a greased 9" pan with mixture till halfway up the sides. Brown onions and meat in oil, add celery and seasoning, cover and simmer for 10 min. Add tomato sauce and cover. Simmer for another 45 min. Fill shell with mixture. Bake at 400 until edges are browned (10-15 min.)

Challah

Mushy Challah

Serves: 1 large loaf

The LA Maidela and her husband's search for the ultimate in dense, moist challah resulted in the following recipe.  They affectionately refer to this type of challah as "mushy" (mooshy).

3 1/4 cups flour
3 tbsp. sugar
2 tsp. yeast
1/4 cup mocha mix
1 cup water
1 1/2 tsp. oil
1 egg

Put all ingredients in bowl.  Mix and let rise for 1 hour, or when doubles in size.  Take dough and separate as desired (two pieces if braiding, etc.).   Let rise for 20 min.  Braid, brush egg onto surface, and let rise for 30 min.   Put in oven for 1/2 hour on 375 degrees.

Classic Challah

Serves: 4-6 loaves


4 packages dry yeast
3 ½ cups warm water
¾ cup sugar
1 ½ tbsps. Salt
13 ½ cups flour
6 slightly beaten eggs
1 cup oil
Glaze: 1 beaten egg

Dissolve yeast in warm water in a bowl. When dissolved, add sugar, salt, and half of flour. Mix well. Add eggs and oil, slowly stir in the rest of
the flour. When dough pulls away from the sides of the bowl, turn onto floured board and knead for 10 min. Knead until dough springs back when pressed lightly. Place dough in oiled bowl, turn it so top is oiled as well. Cover with a damp cloth, let rise for 2 hours punching down every 20 min. Separate with a blessing. Divide and shape as desired. Place on well greased bread pans. Let rise till double in size. Preheat oven to 375. Brush glaze on top. Bake 30-45 min. until browned. Cool on racks.

Soup

Chicken Soup

1 chicken (1kg)
1 celery root with green leaves
1 parsley root with green leaves
2 zucchini
1 big onion
2 carrots
2 liter water
1 table spoon chicken-sup powder (Telma - preferred)

Boil the chicken until dirty foam rises,take out with a big tablespoon. Add the soup powder, add roots, add the vegetables. cook 1.5 hour. Before serving add the green leaves. Serve with Cnaidaleh or Locshen

Side Dishes

Broccoli Salad

Serves:  ?

1 medium sliced onion
½ cup raisens ( optional)
1 cup of mayonaise
1 tsp. lemon juice
1/4 cup sugar
1 bunch raw broccoli ( washed )

S1: Mix together and marinate. Chill for 3 hours then serve.

Matzah Stuff

Chocolate Carmel Matzah

Serves:  5-10

4-6 Matzahs
1 cup of unsalted margarine
1 cup of brown sugar
¾ cup of chopped chocolate

Preheat oven to 375 Cover a cookie sheet with foil and then with parchment paper Evenly spread the matzah all over cookie sheet to cover any empty spaces. Mix margarine and brown sugar in a pot and bring to a boil while stirring.  After boiling, turn off the fire and continue to stir for another 3 minutes. Then pour on matzah and cover completely.  Turn oven down to 350 and put matzahs in.  Bake for 15 minutes.  Do not let burn…turn oven lower if needed. When matzahs are ready, remove from oven and sprinkle chocolate over matzahs.  After about 5 minutes when the chocolate is melted, spread chocolate all over matzahs. Place in refrigerator till chocolate has hardened.
